Just a couple of years ago, I was a full-time Pub Manager — always on my feet, full of energy, and passionate about good food. But when illness struck in August 2024, everything changed. Diagnosed with Long Covid/ME, I suddenly found myself bedridden, exhausted, and uncertain about what the future would hold.
What began as a way to pass the time — experimenting with dough in my kitchen — soon became something much more meaningful. Baking gave me purpose again. Slowly, loaf by loaf, I began to rebuild my strength and confidence.
My focaccia bread quickly became a labour of love — soft, golden, infused with olive oil, herbs, and creativity. I started sharing my loaves with friends and neighbours, and soon word spread. Orders began to roll in, and before long, my kitchen transformed into a small but thriving micro-bakery.
Today, Lady D’s Fabulous Focaccias stands as a symbol of resilience, creativity, and the simple joy that good food brings. Each loaf tells a story of recovery, community, and finding light in the darkest of times.
